Recipe: Scrambled Egg Avocado Toast

Though I’m not the best chef, I do have a few recipes in my regimen for when I want to cook for myself. This includes scrambled eggs, grilled cheese sandwiches, and nachos with an assortment of toppings. This morning, I decided to make myself some scrambled eggs, but with a twist. My grandma makes herself some avocado toast each morning, and today, she luckily had some of her avocado mix left behind. In my efforts not to waste good food, I decided to incorporate it into my meal.

Now before I let you in on the secret for my grandma’s avocado mix, I would like to let you know that my grandma says that this recipe really depends on what you like. All the tiny details regarding how much of each ingredient to put is based on your personal taste. So the directions that I’m about to disclose are purely based on what she likes. Also, feel free to add any other ingredients that you enjoy. 🙂

Ingredients for Avocado Mix:

  • Chopped avocado
  • Chopped tomato
  • 1tsp of olive oil
  • Chopped chives
  • Black pepper
  • Salt
  • Lemon/lime juice

Directions for Avocado Mix:

First you chop up one avocado, a few slices of tomato, and as many chives as you feel necessary. Next, you want to pour all three of these ingredients into a bowl, and drizzle with 1tsp of olive oil. Then, sprinkle some black pepper and salt to taste, and finish off with a spritz of lemon or lime juice. This last step is very important, my grandma says, because without the lemon or lime juice, the avocado starts to get black quickly. The juice acts as a preserver for the avocado, but also adds a nice flavor to the mix.

Ingredients for Scrambled Eggs:

  • 2 eggs
  • Chopped chives
  • Milk (whole)
  • Cheese
  • Avocado mix (see above)
  • Rubschlager Sesame Multigrain bread (or any bread you choose)
  • Salt
  • Black pepper
  • Any type of butter

Directions for Scrambled Eggs:

First, I crack the two eggs into a bowl, and pour in about a 1/4 cup of whole milk. Next, I grate some cheddar cheese into the bowl. With this step you have some flexibility, and can add as much cheese as you want, or even change the type of cheese to your liking. Before you add in the chives, mix the eggs, milk, and cheese together thoroughly. After this step, it’s time to put in the chopped chives. You can also be creative here, and add in other ingredients. I sometimes like to add in bacon, or even chopped peppers. Given I didn’t have any of these, I had to stick with just chives. But once you put in your chives, feel free to sprinkle your black pepper and salt. After this is when you can mix it all together, and finally put it in a pan and cook it. As a base in the pan, I like to put some butter, but I find olive oil works just as well. As you’re cooking your egg, you can toast your bread. But don’t forget to check in on your egg and make sure it’s cooking the way you like. Once your egg is complete, take it out of the pan, and spread it evenly onto the bread. Next, put your avocado mix on top of the egg.

You should finish with three layers: bread, egg, avocado mix. Once you’re at this stage, you’re basically done! Now is the time to drizzle on any sauces that you like. Enjoy!
